Peanut butter and jelly sandwiches come to mind when you think of sack lunch ideas. But we want to be eating like adults, not children, especially if we’re bringing our lunch to work. We want variety and tasty options otherwise it’s tempting to cheat and go out for lunch.
Here are 3 different sack lunch ideas, along with some mix & match snacks, that you can bring to work.
1. Turkey Hummus Wrap
This is one of my favorites to bring to lunch every day. Spread 1 tablespoon of hummus on a whole wheat tortilla or pita then add a handful of greens and 2 or 3 slices of deli turkey. Add the cherry tomatoes then fold the wrap.
2. Chicken Salad Wrap
I love to order chicken salad at a restaurant but it’s healthier if I make it myself. Cook up 2 boneless, skinless chicken breasts, let them cool, then dice them up. With 2 cups of the diced chicken, mix a half cup of mayonnaise, 1 tablespoon of lemon juice, 1/2 cup of celery, 1/2 cup of chopped walnuts, and 1/2 cups of grapes sliced in half. Spread the chicken salad mixture on a whole wheat tortilla and add a handful of the mixed greens.
3. Cranberry Chicken Salad
My old roommate used to love making her salads in mason jars because it keeps them fresh all week. However, if you’re able to make them in the morning, then you could skip the mason jar and just use a small container for the vinaigrette. Build your salad with 2 cups of mixed greens, 4 oz of diced chicken breast, 1/4 cup dried cranberries and walnuts, and sprinkle feta or bleu cheese. Pour no more than 2 tablespoons of raspberry vinaigrette in a separate container to drizzle on the salad at lunch time.
